The roots of the annual or biennial plants are good to eat (before flowering). They are juicy and can be processed just like salsify or parsnips. You can simply boil them, smoke them, fry them, process them in the stew and steam them. The young juicy shoots can be eaten peeled very well. It's even a super vegetable to pick. The seeds can be eaten sprouted. The root can also be dried and ground into powder.
