Great, tell me how to carve it without being spoiled by instant yeast

This is Sourdough bread, so no instant yeast used. You can do it with a yeasted dough too. It looks better if the flour is a mix of white and wholemeal flour. Once the dough has been shaped and second proved, sprinkle the top of the risen dough with flour and carve your design using a razor blade. Bake it as usual and it will come out looking cool!
