An edible in the Canadian wild, this mushroom grows over seven inches wide when mature.
According to blogs, the mushroom can be appealingly cooked in Pierogies, and they are savoured by Russians, if not well known to Canadians.
This mushroom produces a thickener much like Okra, and is not appreciated by cooks who like to fry up the goods. If simmered and sauteed with onion, garlic etc and then folded into Pierogies or Ushkas, the food is comfortable.
The mushroom is characterized by brown cap and gills, one ring on its stem, white sporing and a brown spot in the centre of the cap. As well, it has speckling called the "five o'clock shadow"!!
Over the last month we have had huge rains, overcast and cool damp fogs, resulting in this odd growth right in my front yard.
