The ribs pictured are from a feral hog. The ribs have been marinated for 24 hours. Then slow cooked in my smoker, the last phase includes adding my homemade BBQ sauce while the ribs finish. Feral hogs have been found in 17 of 33 New Mexico counties. Feral hogs, which can be extremely destructive, kill native plants and animals and also can carry 33 different diseases, are being hunted out of the state. Note: The ribs pictured taste even better than they look.
