The herb-stir-me-not protects itself against herbivores by folding its leaves when touched. This goes so fast that an animal is shocked and does not try to eat the plant again. The leaves also close when it gets dark or when the plant is in the wind (as if it is blown). The folding occurs under the influence of activated substances that ensure that water quickly diffuses out of the cells, causing the cells to lose their turgor (pressure on the cell wall) and collapse. The leaves take about half an hour to open again.
