So here it is….pulled pork pie 1XL pie or 8 individual pies

2kg pulled pork shoulder skin on
Apple juice enough to cover meat
2 tablespoons or 1-4 cup dried kawa kawa
I tried to think of substitutes so something
that’s a little peppery
2 tablespoons or 1-4 cup of horopito
I have not thought of a substitute for this
When I do I’ll post it
1-2 cup Manuka honey (or honey)
1 tablespoon of grated fresh ginger (optional)
1 tablespoon of cornflower
2 sliced grilled carrots (optional)
1 tablespoon of chilli flakes (optional)
1 packet of ready rolled flakey pastry for the
Top of the pie
1 packet ready rolled savoury pastry
For the bottom of the pie or just use flakey
Making
1 in a slow cooker add pork shoulder and
Apple juice to cover
2 tablespoons kawa kawa
1 tablespoons horopito
Honey,salt,pepper,garlic,ginger if using
And soya sauce if using.
Cook on high pressure for 90minutes. (Alternatively cook in a moderate oven for two hours)
Cool and seperate juice from meat
2 over medium low heat reduce the sauce juice by a third.
This is where you decide if you want more or less of something (add to taste)
When the taste is at your liking it’s time to thicken
3 make a thickening agent with the corn
Flour by adding enough water to make a
Pouring consistency.add this a bit at a
time to the hot sauce while stirring untill
Thickened,add more as you need….
Then cool
4 for the next meat filling with 2 forks or 2
Tongs peel off skin and discard. Shred the
Meat. Preheat oven to 180 degrees C
(Centigrade)
5 to assemble line your greased pie dishes
Or roasting dish or baking pan with
Bottom pastry usually savoury although
You can use flakey. Overlapping the sides
Of the dish you have chosen.
Layer sliced grilled carrots, sprinkle with
Chilli flakes and add pulled pork on top
Add the cooled thickened sauce on top
Then place flaky pastry on top to meet
The bottom pastry and pinch with a
Fork to bind top and bottom
Prick a few holes in the top and brush egg
On top
6. Cook for 30 mins in a preheated oven or
Untill pie is slightly brown on top and
Bottom
