The blackish, lumpy soil in the foreground is microbiological soil crust. These crusts are combinations of micro-organisms including algae, blue-green algae, and fungi. They aer critical to the ecology in arid and semi-arid areas; they stabioize the soil against wind and water erosion, and are important in providing nutrients to plants.
But they are also VERY fragile. The bare path along the right side of the frame is probably from a couple of cows walking several years ago - the crust has still not healed.
