need
1x SCOBY (symbiotic culture-colony of bacteria and yeast)
1x cup of kombutcha water
1x 4 litres water
plus one cup of hot water
add
1 1-4 cup of sugar
12 teabags or equilivent of loose tea
5 bags of fruit tea
boil for a while
when it has cooled down (overnight) throw the teabags-leaves away- filter through muslin or a strainer into a big jar.
add the saved cup of tea (from the last batch)
gently put baby scoby into the jar.
cover with a breathable cover paper towel -teatowel
leave for one week in a dark place.
take scoby out take one cup of the juice out
decant remaining liquid into bottles add 6 sultanas so the bottled kombutcha tea will keep processing the sugars and give off bubbles.

Kombutcha can turn to vinegar if left too long. But this is still useful as a grease cutting cleaning agent. It can also be used as a hair rinse, I heat a mug of kombutcha vinegar up then pour onto a hand towel which I wrap around washed hair. Vinegar can also be useful for eradicating hair lice as the vinegar unglues the eggs. I have not tried kombutcha yet for this as my kiddies are teens and have not come home with these visitors lately. Adding salt to kombutcha vinegar kills weeds quite effectively. Some people have dried the kombutcha scoby to make a leather type material. Versitile wee organism. Update I. Have heard that flies dislike the smell of vinegar.,,,so here goes my next trial.
Forgot to mention do not leave kombutcha juice sitting for an extended time in metal as it will eat-corrode it not a healthy reaction for you or storage containers
