This strange looking creature is a Giant Swallowtail caterpillar. Also known as a bird poop caterpillar, when its not in defense mode it looks just like bird poop! When it feels threatened it protrudes very smelly red antennae.
The Butterflies lay eggs on Citrus tree leaves, and the Caterpillars feed on those leaves before they turn into a chrysalis.
