While I'm at it, I thought I'd write out a quick and easy recipe that is totally healthy, and energy saving as well.
Stove-top Curried Ratatouille.
(Ratatouille is usually an oven roasted casserole comprised of layered vegetables, especially zuccini)
What I've done to it is to layer veggies and simmer, right in a frypan.
You'll need:
A whole sweet potato, or a whole large regular white potato, or both, depending upon taste.
One or two bouncingly fresh zucchinis, golden or green.
1 to 3 garlic cloves, crushed.
1 small or half a medium onion, thinly sliced in circles.
half or one whole beefsteak tomato
Two to four ounces of feta cheese
black pepper,
kosher salt,
splashes of soya sauce,
splash of hot sauce
1 well rounded teapoonful coconut oil
1 tsp or more curry powder
Heat the oil in a medium frypan, using low to medium heat. Add chopped garlic and sliced potato. Sear on both sides. Sprinkle with salt and pepper.
Reduce the heat, and add a layer of thinly sliced onion rounds. On top of this, layer half of the zucchini rounds, and half of thetomato rounds. Sprinkle with curry powder.
Repeat the layering of onion, zucchini and tomato. Top this with crumbled feta cheese.
Before you lid this creation, reducing the heat to about 2, pepper the top layer, and sprinkle hot sauce and soya sauce (in small quantities) into the pan.
If you leave this to simmer for twenty minutes to half an hour, you'll be surprised by an orderly, rich-tasting casserole dish, that has used 1-6th of the hydro to create. Use one or two of each item according to how many diner guests you have. Halved amounts add up to two entree sized servings.
