This is an iconic dish which Chinese people eat on the third day of the lunar new year. The main ingredient is raw fish but it has carrots, mooli, cucumber and many colourful condiments - all with significant names which sound like wealth, happiness or longevity. A poem is recited as each ingredient is added to the huge dish in the middle of the table, and when all are completely added, everyone present take their chopsticks and toss the salad shouting "Lo Hei. Lo Hei" which means spread the wealth. The higher you toss, the more wealth you will get in the new year. It is fun, inclusive and very tasty as well.
