I am lucky to own a Canon 5D Mark IV. My favorite lens for this type of photography is the Canon 300mm f/2.8 IS. I keep the aperture at 2.8 but the speed is at 1/8000 sec. The ISO depends on the brightness, it goes from 800 to 2000 ISOInspiration
