The three main temperate cereal crops. From left to right: wheat (Triticum aestivum), oats (Avena sativa) and barley (Hordeum vulgare). Wheat is the most important of the three for human consumption, being used to produce the flour used in most breads, cakes and other baked food. For many years oats were primarily used as a fodder crop, but with the rise in the consumption of breakfast cereal and mixed grain breads they are once again widely used. Barley is widely used in animal feeds and its main use for human consumption is in producing malt and as an ingredient in multi-grain foods.
