This is one of my breakfast faves, but you can just as well eat it as a dessert or a healthy snack. Mash one ripe banana, mix with one egg, add some salt, cinnamon and if you want some pepper, ginger and crushed cardemon seeds, fry carefully on a low fire, be aware when frying the other side that it's more fragile than a pancake made from flour, delicious when fried in a bit of coconut oil and add some low fat yoghurt and tangy fruits, as the pancake will be sweet.
