Date Palm juice gud(Jaggery) is made of sweet juice extracted from the soft top of the date tree. The traditional processing of Date Palm gud, which is made from the sap of the date palm, is available only from November to January. With urbanization of the rural areas the trees are being cut down and increasing pressure on the existence of this industry and tradition making the product more pricy and less available. Sometimes it is also called Country Sugar as it is prepared in households in rural areas of certain countries. It is also called molasses due to its semi-solid state.
