This "plain" around the town of Zafarraya in Andelucia is the bowl of a long extinct volcano. About a thousand metres above sea level the plain is protected from wind by mountains all around. These mountains are the perimeter of the volcano. The rich volcanic soil is ideally suited to growing vegetables. However being very flat the problem is getting water to the plants. Being very Spain the problem can often be getting water at all.
