I hike with my D7000 and 150-600mm lens on a tripod plus a full backpack for 3-4 hours 2-3 times a week. Take your time setting up, think about the story you want to tell with your photo. Use a tripod as much a possible, one really good photo is better than 50 not so good photos. I can't give out any advice on the best camera settings to take a photo, I am a point and shoot person auto settings only.
