Depends what you want to achieve - a fast shutter speed freezes the wave which I love when it's rough/bright but slowing the shutter down produces a smoother look...the slower the speed the more "milky" they look. I am on this learning curve too! I use my "S" setting to make life easier and when I'm really going for a slow speed I use exposure compensation...lots of trial and error though! A tripod is key for the slow stuff..thought I could do it by hand but not possible!
