Greek Salad
Ingredients:
1 large cucumber diced
1 pint grape tomatoes halved
1 green bell pepper diced
1/2 red onion thinly sliced
1/2 cup Kalamata olives halved
4 ounces feta cheese crumbled
salt and pepper
Add all ingredients in a bowl and stir to combine. Drizzle dressing on top.
Greek Dressing:
1/3 cup red wine vinegar
1 lemon juiced
1 tsp Dijon mustard
2 garlic cloves minced
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp black pepper
1/2 cup olive oil
Add all ingredients, except the oil. Slowly add olive oil and whisk vigorously while pouring until dressing is emulsified
