I had odds and ends of various fruits and vegetables in the refrigerator. I started out with intentions of making two salads...one tossed salad and one fruit salad...but...it was the end of a very long day and before I knew it I had added cut up fruit on top of the lettuce...I was not going to try and separate the fruits from the vegetables I had already diced and added. So I kept building the salad and topped it off with a handful of shredded jack/colby blend and drizzled peppercorn ranch dressing over the top.
