Double Chocolate Espresso Muffins

Ever have those days where you really do not feel up to doing something but you do it anyways. Those days for me usually means more work. Well, I had melted butter on the counter ready to add into the bowl when I opened the cupboard and something fell out of it and smack dab into the bowl of butter knocking it over and it went everywhere. I hate cleaning up butter because when you clean it, it is still greasy. I had to move everything to clean and clean it three times. Ugh. I have to admit though the muffins I made were the best ones I have ever made. LOL
