I sometimes add about 10% contrast and a small amount of color. Also maybe change the amount of shadow or highlighting.In my camera bag

I try always to use a fast shutter speed ( around 2000 ) and decrease the EV maybe as much as a full 2.0 And I use the S setting. These settings or similar will bring out more color in these kind of images.
