In Southern Louisiana, boiled crawfish are a delicacy enjoyed by just about everyone. Boiled in a large pot with special seasoning other foods are added for additional flavor such as potatoes, onions, lemons, and just about anything else you want to drop into the pot. They are pealed and the inside body parts are eaten. A fun expression is 'pinch the tail and suck the heads' is known to all.
