Breakfast this morning was my other new must have!! Sweet Potato Toast!! So super simple to make and delicious - I actually eat it for lunch and dinner as well. I've seen video where the sweet potato was toasted in a regular toaster - that doesn't work for me so I heat them up in a skillet until soft and "toasted". This is served with sauteed kale and a fried egg, but here are so many ways to serve - use your imagination!!
