In many parts of India, including on the edge of the Gir Forest Sanctuary where I lived for several years, chai, a type of tea drink, was the most commonly consumed beverage. In the local version black tea leaves ground up much like coffee was steeped for some time inside a cloth bag dipped in hot buffalo milk mixed with a small amount of water in a tea kettle. Buffalo milk is much creamier than cow’s milk while at the same time has a lower cholesterol value. Some sugar was added.

As Hamir, a local game guard and dear friend is demonstrating here, it is commonly drunk from a saucer rather than a cup. I found the local chai to be absolutely delicious.
