In our waterways, carp can be in plague proportions and affect native species. They are mostly netted and turned into garden fertilizer. Some cultures from Mediterranean regions eat them... I haven't!

Waterways I can believe... but this is a 15 x 30 kilometers lake with average depth of 152 meters, and this carp here is autochtonous sort. Tastes much like sea fish, since the lake is mainly rock - no mud which would give that bad taste to many river and pond sorts. I eat it often and like it a lot, although I've been raised on sea fishes.

Yes - that would make a difference to the taste. Much the same mullet from open waters vs ones in tidal rivers, where they can taste "muddy." Fish are my #1 choice, esp. if I can catch them myself!

In Macedonia they also have good knowlege on how to prepare fish, also what condiments to use. So the final result is quite what you'd expect from open-sea fish. I never was able to disregard the mud smell / taste so I never liked freshwater fish prior to tasting these from Lake Ohrid, and it has more autochtonous sorts. It's really hard to explain, the only way is to try it.
