Very interesting, Eggers. I saw very similar sights in Thailand. They all, for the most part, seemed very happy. I had a guide a couple of times on the Choa river to see how the people lived without the tourists. What a wonderful experience.

I took this photo in a street market in Quan Cain Rang in the Can Tho region of Vietnam. I was participating in a charity cycle ride from Vietnam to Cambodia. We were heading in the direction of the Mekong river.Time

Well, if it was taken in the morning then there would have been a really soft light which can't be observed because I converted it to B&W.Equipment

For such an endeavour, I would always be travelling with the iPhone however, in normal circumstances, I carry a bag around comprising an EOS 1000D, a Canon 70-300mm lens, a tripod (grrr), a plastic container with lots of little bits and pieces like batteries, memory cards, adapters, cables etc. And as a recent addition to the bag's contents, I recently acquired a very, very, very cheap Canon Powershot (bridge?) camera with a macro lens and am currently attempting to crowbar it into the aforementioned bag. For those who have read about my bag contents in the past, I am happy to report the half eaten baguette has been removed by some nice gentlemen in hazmat suits.Feedback
If you are on a ride like this then make sure you stop and metaphorically "smell the roses" i.e. take time out for yourself otherwise you will miss significant parts of the journey. Allow time to stop. Be in the moment. Irrespective of the cliches, it is with this mindset, you will see the world differently and that, in turn, enables you to capture something interesting and special. Good Luck!
