I have spent some time observing the behaviour of these little egrets and discovered that due to the high rise buildings which blocks the angle of the sun most of the day, they start their fishing runs only at a certain time. This appears to be when the light moves around and low enough to get past the buildings so tends to be around 1 hour before sunset at this time of year. On this occasion the lighting is from the left and this image captures the tense moment shortly after the egret's dive underwater to catch the fish when it is struggling to get bad into flight with the water coming off it and while also holding this rather large fish for a bird this size. Appearing to walk on water as well, I like this frame the most out of all in the sequence I have posted, because it conveys a feeling of tension as the bird struggles on the surface of the water while also analogous to other situations where surface tension applies to how smaller animals can also appear to walk on water.
