This stove most likely was fired mostly with "Prairie Coal" also know as "Surface Coal" which is more commonly known as buffalo chips and cow chips. When a hotter fire was needed mesquite was preferred.

Interesting info to go with such a wonderful picture. Would love to be able to see it fired up and someone cooking...far cry from a microwave!

Nice capture and Information, I saw a few of these kinds of Stoves in the missions around San Antonio although I did not know about fuel used to fire them, thanks for sharing:-)
