Dexter cattle are from Ireland and are the smallest European cattle breed, but they are not a miniature breed. They are about half the size of a traditional Hereford. The Black Dexter is a meat animal and the more rare and valuable Red is used for milk, producing a rich milk which is relatively high in butterfat.
Dexter cows are exceptionally good mothers and are known for easy calving. They will produce enough milk to feed two to three calves, and will willingly nurse calves from other cows. The quality of the milk overall is similar to the milk from Jersey cows.
